I can't believe it's already June! May went by in a flash. I usually miss peak strawberry season because it's only from Mid-May to early July. This time, I took advantage of fresh strawberries and made this strawberry torte. I'm working on loads of strawberry recipes in the next few weeks so stay tuned!

Ingredients
- Unsalted butter, melted
- Gluten-free flour
- Baking powder
- Salt
- Granulated sugar
- Eggs
- Vanilla extract
- Whole milk

Instructions
Preheat the oven to 350 degrees. Spray two 9-inch cake pans with oil or butter and line the bottom with parchment paper rounds.
In a medium bowl, combine baking powder, salt, and gluten-free flour. Set aside.
In a large bowl, mix the eggs and butter together. Pour in the sugar. Slowly add the dry ingredients to the wet ingredients. Mix until combined.
Add the whole milk and vanilla extract.
Divide the batter between the two 9-inch round cake pans. Bake for 30 minutes on the middle rack.
Let the cakes cool for 15 minutes, then flip the cakes onto a cooling rack. Peel off the parchment paper.
While the cakes are cooling, whip heavy cream with an electric mixer. Slowly add in the granulated sugar and vanilla extract. Beat until the cream is soft.
Slice six of the strawberries. Leave the rest of the strawberries whole.
Place one cake on a plate and top with half of the whipped cream. Top with sliced strawberries.
Lay the second cake layer on top of the first cake layer. Top with the rest of the whipped cream and whole strawberries.
Hint: you can trip the tops of the cake if you wish. This makes the final product more even. Use a serrated knife.
