    Strawberry Chocolate Overnight Oats

    Who knew overnight oats could be so fun? Add a chocolate shell top and it’s just as luxurious as dessert!

    Overnight oats are the perfect breakfast on the go, but they can also make for an easy dinner or snack. They’re packed with protein and fiber, and you don’t have to spend hours in the kitchen prepping them. Just throw the ingredients together in a bowl, put it in the fridge, and wait!

    Ingredients

    • Oats
    • Milk (I used almond milk)
    • Cinnamon
    • Vanilla Extract
    • Freeze Dried Strawberries
    • White Chocolate

    Recipe Ingredient Notes

    The Oats: I use Bob's Red Mill oatmeal. You can find it here. I like this brand because I know the oatmeal is reliably gluten-free: "Bob's Red Mill Gluten-Free Old-Fashioned Rolled Oats have been thoroughly segregated, tested, and re-tested to confirm their gluten-free status" (found on Bob's Red Mill website).

    The Milk: I like using non-dairy milk. Usually, I prefer to use oat milk, but in an oatmeal recipe, it just seems like too much oat. Luckily, there are lots of other options. I used almond milk here, but flax milk would also be amazing. Or, dairy milk would be just as delicious.

    Freeze Dried Strawberries: I'm relatively new to freeze-dried fruits, but I really like them. I found these freeze-dried strawberries at Target, but they're pretty much available everywhere. Plus, they're an awesome on-the-go snack.

    Notes on the chocolate shell

    After pouring the chocolate over the top of each oatmeal bowl, don't forget to chill in the fridge for at least 10 minutes. The chocolate needs time to harden to give you that satisfying crunch.

    What are overnight oats?

    Overnight oats are a healthy breakfast option that takes less than 5 minutes to make.

    You can add different ingredients to your oatmeal such as fruit, nuts, seeds, and yogurt.

    Can I add toppings?

    Bananas, strawberries, and raspberries are delicious. Also, flaxseed and granola are great toppings.

    Do you need to cook the oats before adding milk?

    No!

    How long can you store overnight oats?

    You can prepare overnight oats up to 3 days before eating them. They can be eaten hot or chilled. Quick oats work well as an alternative.

    Can you use quick oats?

    Yes! You can use regular old rolled oats instead of steel-cut oats.

    Is there any difference between instant and quick oats?

    Instant oats contain more sugar. Quick oats are slightly sweeter. Instant oats tend to be thicker while quick oats are thinner.

    Are overnight oats gluten-free?

    Yes! Gluten-free oats are available at many grocery stores. I use Bob's Red Mill.

    Ingredients
      

    • 1 cup rolled oats I used Bob’s Red Mill
    • ½ teaspoon ground cinnamon
    • ¼ teaspoon salt
    • 2 cups milk
    • ¼ cup freeze-dried strawberries
    • 1 cup white chocolate melted

    Instructions
     

    • In a small bowl combine the oats, cinnamon, salt, milk, and half the freeze-dried strawberries. Stir well.
    • Place in the fridge overnight.
    • Take out of the fridge after 24 hours and pour into bowls. This recipe should fit four bowls.
    • Melt white chocolate and stir in the remaining freeze-dried strawberries.
    • Pour chocolate over the four bowls of oats.
    • Put the bowls into the fridge for 10 minutes or until the chocolate hardens.
    • Enjoy!
