Last night I had a dream about M&M cookie bars so I had to make them. They are so delicious, gooey, and the best combination of a brownie and an M&M cookie.

This recipe is perfect for movie nights, a party, or to have stocked in the freezer for any time you need a sweet treat!
This recipe was inspired by my recipe for gluten-free Lofthouse cookies and pairs great with a glass of milk.
Ingredients
- Gluten-free flour (I used Cup4Cup)
- Baking soda
- Baking powder
- Salt
- Brown sugar
- Eggs
- Unsalted butter
- Vanilla extract
- M&M's

Instructions
Preheat the oven to 350 degrees and line an 8x8 inch brownie pan with parchment paper.
Melt the butter in a microwave-safe bowl.
Combine flour, salt, baking soda, and baking powder in a medium bowl and set aside.
Pour the melted butter into a large bowl. Add in the brown sugar and eggs. Whisk until combined.
Slowly mix the dry flour mixture into the butter mixture. Mix until combined. Pour in the M&M's and gently stir.
Press the dough into the brownie pan. Top with more M&M's.
Bake for about 30 minutes. You will know the bars are fully cooked when a toothpick inserted into the center comes out clean. Let the cookie bars cool completely before removing them from the pan.

Storage
Store the cookie bars overnight in an airtight container. To freeze, wrap the bars in plastic wrap and freeze for up to 4 months.
Top tip
Make sure to let the bars fully cool before removing them from the pan.
