I think these bars are so versatile. They're good for large gatherings or for an after-school treat. Plus, no baking is required for this recipe!
This recipe was inspired by my triple chocolate chip muffins, which is another easy and delicious recipe.
Ingredients
- Unsalted butter
- Peanut Butter
- Powdered Sugar
- Gluten-free graham crackers
- Semi-sweet chocolate

Instructions
Line an 8x8 baking pan with parchment paper and set aside.
Combine the butter, gluten-free graham cracker crumbs, 1 cup peanut butter, and powdered sugar together in a large bowl.
Press the mixture into the bottom of the baking pan.
In a small bowl, melt the chocolate and ¼ cup of peanut butter together in the microwave. Microwave on high at 30-second intervals until you can stir the mixture smoothly.
Pour the chocolate over the first layer in the baking pan. Chill in the fridge for at least 30 minutes before serving.
Hint: The longer you chill the bars, the better. Aim to chill the bars for at least an hour before serving.

Storage
Store the bars in an airtight container in the refrigerator for up to seven days.
Top tip
Do not microwave the chocolate for more than 30 seconds at a time. It's hard to fix chocolate that has burned.
No Bake Peanut Butter Bars

- 2 cups powdered sugar
- 2 cups gluten-free graham cracker crumbs
- 3 cups semi-sweet chocolate roughly chopped
- ¼ cup peanut butter
