The Gluten-Free Flour
I have two go-to gluten-free flours. I like either Cup4Cup gluten-free flour or Bob's Red Mill flour. They are linked below for easy access. These two brands make gluten-free baking so easy!
Make the cookie base
To make these frosted sugar cookie bars, cream the butter with sugar. Add the egg and vanilla. Mix in the dry ingredients right away. Stir in the freeze-dried strawberries and chocolate chips. Bake them at 350 degrees for 20 minutes. The base is very similar to a recipe for gluten-free sugar cookies.
Let it cool completely before frosting and cutting into bars.
Make the frosting
Mix together marshmallow fluff and powdered freeze-dried strawberries. It's that simple!

A tip to make this recipe perfectly
You need to line your baking sheet with parchment paper before you bake these cookie bars. To make sure they come out cleanly, you should use an 8x8 pan. But you can also use a 9x13 pan or even a pie plate.
Frosting ideas
Usually, frosting is made by mixing together ingredients such as milk, butter, powdered sugar, and flavoring. This mixture is poured into a piping bag and piped onto baked goods. You can totally substitute the marshmallow frosting for a classic buttercream frosting. I find the marshmallow fluff frosting recipe a lot easier.
Recipe Notes
Bars made with this recipe will be easy to cut into bars, but you need to wait until they are completely cooled. When cooled, they should taste like soft frosted sugar cookie bars.
You can omit the chocolate chips and/or the freeze-dried strawberries.
The cookie dough should be sticky enough to stick together but not too wet.

What sprinkles should I use?
I love using classic funfetti sprinkles. You could also omit them to look similar to plain frosted-sugar cookies, or even top with just freeze-dried strawberries or chocolate chips.
Any other ingredient alternatives?
You can use oil instead of butter in this sugar cookie bars recipe.
What gluten-free flour is best for these cookie bars?
My favorite gluten-free flour is either Cup4Cup or Bob's Red Mill. Any almond flour will work, too.
What should I serve these cookie bars with?
Serve these bars with fresh whipped cream, berries, vanilla or strawberry ice cream, or just on their own.
Can these be made vegan?
I haven't tried making these vegan; however, to make these bars vegan you would need to omit the chocolate chips, replace the egg, and use a vegan oil. You could use coconut oil. And, Bob's Red Mill sells an egg replacement that may work well. I'll experiment with the recipe and update it accordingly.
What are funfetti chocolate chips?
Funfetti chocolate chips are made by Pillsbury and taste like birthday cake. They're white chocolate chips with rainbow funfetti inside. Here is a link to an interesting article on the chocolate chips. Feel free to omit the chips from the recipe.
