This recipe was inspired by my Boston Cream Pie cookies.
Ingredients
- Eggs
- Granulated sugar
- Gluten-free flour: For best results, use King Arthur's Measure-for-Measure gluten-free flour. This is the only flour that will give you the best results. Bob's Red Mill doesn't turn out nearly as well because the apples float to the top in the oven.
- Baking powder
- Brown sugar
- Unsalted butter
- Green apples
- Salt
- Instead of homemade caramel sauce, you can use a storebought version.
See recipe card for quantities.
Instructions
Preheat the oven to 350 degrees and line a 9-inch round cake pan with parchment paper. Set aside.
Slice the apples thinly and layer on top of the parchment paper in the cake pan.
In a large bowl, whisk the eggs until frothy using either a whisk or an electric mixer. Add the sugar and salt and whisk until combined.
Pour the baking powder and flour into the sugar and egg mixture. Mix thoroughly. Set aside.
Heat the brown sugar and butter in a saucepan over medium heat.
Stir constantly until bubbling. This is the caramel.
Pour the caramel over the sliced apples into the cake pan. Top with the cake batter.
Bake in the oven for 30 minutes.
Remove from the oven and let cool. Flip the cake pan over on a plate and peel off the parchment paper.
Enjoy!
Hint: Slice the apples thinly and layer them on top of each other. This makes the top very pretty once the cake is done.
Equipment
- A saucepan
- A large mixing bowl
- An electric mixer
- A whisk
- A cake pan
- Parchment paper
Storage
Store the cake in the refrigerator and cover it with plastic wrap. Stick toothpicks around the edges and middle of the cake and then lay the plastic wrap on top. This ensures there is no sticking. Store for up to three days.
Top tip
This cake is best served when it's still warm.

Can you please tell me what I should use in place of sugar since I am a diabetic (LADA). I do not like the taste of the fake sugar, so what do you recommend.
Thanks so much!
