Gluten-Free, Gooey M&M Skillet Cookie with M&M's
The cookie dough is mixed together in the skillet. That means fewer dishes! And, this delicious M&M skillet cookie makes just enough dough to fill one medium-sized skillet.
This cookie skillet is really a cookie cake or a cookie pie. Some people call that a pizookie!

I love all the textures in this recipe. First, there's the crunchy exterior and then the softer inside part of the pizookie.
The Gluten-Free Flour
I have two go-to gluten-free baking flours. I like either Cup4Cup gluten-free flour or Bob’s Red Mill flour. I love both of these gluten-free flour blend. They are linked below for easy access. These two brands make gluten-free baking so easy!
Equipment
- A 10 or 12 inch cast iron skillet
- A rubber spatula
- Mixing bowls
Ingredients
- Unsalted butter
- Brown Sugar
- Granulated Sugar
- Eggs
- Vanilla
- Gluten-free flour
- Baking soda
- Salt
- M&M's
- Semi-sweet chocolate chunks
Instructions
Preheat the oven to 350°F.
Melt the butter in the skillet over medium heat.
Pour in the granulated sugar and brown sugar and mix thoroughly.
In a separate bowl, combine all dry ingredients (besides the sugars which are already added).
Add both eggs and vanilla and combine well.
Pour the dry mixture into the butter mixture.
Mix thoroughly and carefully add M&M's and chocolate chunks.
Sprinkle the top of the dough with more M&M's.
Bake in the oven for 20 minutes.

Tips and Tricks for the Best MM Cookie Cake
Make sure to sprinkle the top of the unbaked cookie with M&M's. That makes sure that you can see all the pretty M&M's.
A note on the skillet
A 10 or 12 inch cast iron skillet is needed to make this M&M skillet cookie. Spread the cookie dough over the entire surface of the skillet, and bake until golden brown.
Serving Suggestions
Serve warm and straight out of the oven. Top with vanilla or strawberry ice cream and lots of whipped cream. Make sure to have glasses of milk nearby, too! Cut the cookie in wedges like you're cutting a cake.
