    Sugar Cookie Pies

    Nov 19, 2021 · Leave a Comment

    Sharing is caring!

These cookie pies will fly off your Thanksgiving table! They're the perfect treat to bring to any holiday gathering. You can totally switch up the filling based on what ingredients you have, too. Try blueberry jam, Nutella, or even marshmallow fluff. The options are endless!

    Ingredients

    • Pumpkin Pie Filling
    • Raspberry Jam
    • Buttercream Frosting (dyed yellow) - recipe here!
    • Sugar Cookies - recipe here!

    Recipe Notes

    • These cookies really aren't difficult to make and decorate. It looks harder than it is, I promise!
    • You want to have a really good set of piping tips and a good, sturdy pastry bag. I have this set (pictured below) and it's really great. Lots of cool piping options!

    Common Questions

Can I omit the almond extract?

Yes! Almond extract is optional in this recipe but if you don't use it, the cookies won't be as sweet. If you do add it, though, try using less for a more subtle flavor.

    What about adding vanilla extract?

Yes, if you prefer vanilla, go ahead and add vanilla!

The dough is sticky and/or crumbly. What can I do?

If the dough seems like it might not come together, just knead in some extra flour until it does.

How many sugar cookies should I make?

I recommend making at least 12-16 cookies per batch. That way, you'll get plenty of cookies for everyone.

    How long do they keep?

Store them in an airtight container in the fridge for up to 2 weeks.

The cookies look under-baked. Can I bake them longer?

Yes, they'll continue baking after you take them out of the oven. Just give them another 5 minutes or so.
