It's a gooey, chocolaty cake filled with a marshmallow center. Think of a lava cake, but with marshmallows instead of chocolate! This mug cake is easily made to be gluten-free, and is the best dessert for one! It's one of my favorite quick cake recipes!

You'll love this marshmallow chocolate mug cake because it's so easy to make and you likely have all the ingredients already in your pantry! It's done in a snap and there's no oven required for this fudgy chocolate dessert.
Ingredients
This marshmallow mug cake calls for easy ingredients you're sure to have in your pantry.
- Gluten-Free Flour: I use King Arthur's Gluten-free Flour in this recipe.
- Granulated Sugar
- Baking Powder: I use Bob’s Red Mill.
- Egg Yolk: don't use the egg white. The single egg yolk will make the cake chewy and moist. Save the egg white for an omelet or meringues.
- Unsweetened Cocoa Powder
- Whole Milk: Any milk will work. I prefer whole milk. You can even use water in a pinch.
- Chocolate Chips: You can use any flavor or variation of chocolate chips like dark chocolate chips. I use large semi-sweet chocolate chips. A chopped chocolate bar will also work here.
- Marshmallow Fluff: marshmallows can be used instead of marshmallow fluff. I love marshmallow fluff because it gets really gooey after microwaving.
- Unsalted Butter
- Salt: I always use Redmond's Real Salt.
- Water: I add a tablespoon of water on top of the mug cake BEFORE microwaving to keep the cake moist.

How to Make Microwave Mug Cake
Combine egg yolk, sugar, and melted butter in the mug. Stir to combine.
Add cocoa powder, gluten-free flour, salt, and baking powder. Pour in milk.
After all the ingredients are combined, add chocolate chips and stir. Press the tablespoon of marshmallow fluff into the center of the chocolate cake batter.
Top with 1 tablespoon water and microwave on high for two minutes.
Hint: use a large mug because the cake does rise in the microwave. Find some of my favorite options HERE.

- Butter: you may use vegan butter instead.
- Milk: dairy-free milk will work instead of whole milk.
- Marshmallow Fluff: a marshmallow or handful of mini marshmallows will work instead of marshmallow fluff.
Mug Cake Variations
- Nutty: add a handful of nuts to the batter before microwaving.
- S'mores: add crushed graham cracker crumbs to the batter.
- Vanilla Extract: add ¼ teaspoon vanilla extract to the batter.
