I've always been fascinated by food pairings. Some foods are meant to be together while others are just plain wrong. But what happens when you combine things like chocolate and watermelon? You get delicious treats like these chocolate-covered watermelon bites. They're perfect for dessert parties, summer picnics, or a fun treat after dinner. It's one of my favorite watermelon recipes!

To make these tasty treats, start with a nice ripe chunk of watermelon. Then cut it into small pieces and place them in a freezer-safe container. Give them a flash freeze -- like 15 minutes in the freezer to firm the watermelon up. Then, dip them in dark chocolate, let the excess drip off, and finish with a sprinkling of sea salt.

Ingredients
- Organic Watermelon
- Dark Chocolate: I used Guittard Dark Chocolate Chips.
- Coconut Oil
- Salt: I always use Redmond's Real Salt.

Instructions
Line a baking sheet with parchment paper.
Cut watermelon into bite-sized pieces.
Place watermelon cubes on a lined baking sheet with space in between each cube.
Freeze for 15 minutes.
Combine chocolate and coconut oil. Melt in the microwave in 30-second intervals, stirring between intervals. The chocolate will be done when the chocolate is smooth.
Remove the watermelon cubes out of the freezer and dip them in the melted chocolate.
Quickly sprinkle with salt and place back on the lined baking sheet.
Let the watermelon thaw for 10 minutes before serving. Store in the freezer in an airtight container until serving.

Variations
- Nutty - replace the salt with crushed nuts (pecans, cashews, peanuts).
FAQ
The watermelon should have a large yellow spot on its skin. It should also sound hollow when you knock on it.
To freeze fruit without it sticking together, place it on a lined baking sheet with space between each piece until completely frozen.
All you need is just a few common kitchen tools and materials, nothing too fancy or complicated.
If using, stir coconut oil into melted chocolate. Remove watermelon from the freezer and dip each piece in melted chocolate.
One word: Freezer.

- A baking sheet: this is needed for baking the galette.
- Wooden spatula - a non-toxic alternative to spatulas.
- Precut parchment paper - a must-have for any home baker.
- A sharp knife - a must-have for cutting watermelon.
Storage
Store in the freezer in an airtight container until serving. These treats are best served within 2 days of making them.
Top tip
Freeze the watermelon before dipping it in chocolate so the chocolate will stick.
