Savory Raspberry Pistachio Gluten-Free Muffins

    Pistachios are a type of nut that comes from the pistachio plant. They are very rich in protein and fiber. They are also high in potassium and magnesium. They are often used in baking or cooking.

    These raspberry pistachio gluten-free muffins are so delicious, and they are a perfect snack or breakfast treat.

    This is an easy muffin recipe - whisk dry ingredients, beat sugar, butter, eggs, and extracts. The extra steps here will be grinding the pistachios, which takes seconds. The same applies to the streusel, where you’ll just need to pulse the pistachios first.

    Pistachio and Raspberry Muffin Making Tips

    Muffin recipes need to be mixed separately, and not over mixed. This ensures that the batter doesn't get too thin or too thick.

    Raspberries should be added to the muffin batter last because if frozen, they tend to sink to the bottom of the muffin. To prevent this, coat the berries in flour before adding to the batter. Stir lightly through the batter.

    Don't overfill the muffin tray - fill your muffin cups 3 quarters full to prevent the mixture from spilling over when baking. Toppings - Add some crushed pistachios and the streusel mixture to the top before cooking - the pistachios will cook into the tops.

    Ingredients

    Pistachio Muffins are delicious! It's a basic muffin recipe with pistachios and frozen raspberries. 

    • Unsalted pistachios
    • Unsalted butter
    • Granulated sugar
    • Baking Powder
    • Salt
    • Milk (I use almond milk)
    • Eggs
    • Frozen Raspberries
    • Brown Sugar
    • Gluten-Free Flour (I use Cup4Cup)
    • Salt

    Choosing the Right Ingredients

    Pistachio nuts are delicious. You should buy them unsalted because you can control the amount of salt in your cupcakes.

    The gluten-free flour I used is Cup4Cup. You can get it at Target or on Amazon (linked below).

    Baking

    Don't overbake your muffins, this results in them becoming dry. Cook them just until a toothpick comes out clean or with only a few crumbs.

    Tips and Tricks

    Don't over mix the batter! Mix just enough to combine everything. Too much mixing makes the muffins tough. I also use muffin tins. They make any cleanup much easier.

    Muffins should be cooled completely before freezing. Individual wrapping ensures the best quality. Freezing preserves the muffin's freshness and taste.

    Instructions

    Preheat oven to 350 degrees.

    Pulse pistachios in a blender until crumbly.

    Mix all dry ingredients in a bowl.

    Combine wet ingredients and add to the dry ingredients. Mix well.

    Spoon into the prepared muffin tins.

    Prepare the streusel and crumble it over the top of the muffins. 

    Bake for 25 minutes.

    • ⅛ teaspoon salt
    • ¼ cup butter softened
    • ¼ cup chopped pistachios
