    Gluten-Free Vanilla Cookie Sandwiches

    These gluten-free vanilla cookie sandwiches are so soft and delicious, they kind of remind me of vanilla oreos. They have a light texture, but still hold their shape nicely. They're delicious, chewy cookies that are very similar to gluten-free chocolate chip cookies. The best part is everyone will love them!

    A cookie sandwich can be made in a lot of different ways. This recipe calls for buttercream in the middle, but you can easily switch that out for ice cream or hot fudge. You could also make it with chocolate ganache instead of buttercream. There are so many options!

    Ingredients

    • Gluten-Free Flour - I use Cup 4 Cup gluten-free flour. It's the best (especially for gluten-free cookies!)
    • Vanilla Extract - I use pure vanilla extract from Beyond Good.
    • Butter - I use unsalted butter.
    • Eggs - room temperature!
    • Salt - I usually use kosher salt.
    • Baking Soda - this makes the cookies rise!
    • Funfetti sprinkles - my favorite!
    • Brown sugar - gives the cookies a nice, rich taste.
    • Granulated sugar - crisps up the cookies a bit.

    The Filling

    Common Questions

    What makes these cookies SO good?!

    They're really moist, which means they don't dry out as quickly as regular gluten-containing cookies. Plus, they're super easy to make!

    How do I store/keep these cookies fresh?

    Store your cookies in an airtight container at room temperature. If you want to freeze them, wrap them individually and then put them into a freezer bag. Freeze for up to 3 months. Thaw overnight in the fridge before serving.

    Can I substitute other flours for gluten-free flour?

    Yes, absolutely! Just keep in mind that some flours absorb moisture more than others. For example, brown rice flour tends to get very sticky, so if you try using it in place of the Cup 4 Cup gluten-free flour, you may need to add extra flour. 

    You can definitely sub gluten-free flour for any type of flour you'd like. Swapping out Cup 4 Cup for regular flour will work well in this recipe. 

    How long does it take to bake these cookies?

    It takes about 15 minutes.

    Can I Omit the Vanilla Extract?

    Yes, you can omit the vanilla extract completely.

    Do I Need To Use Gluten-Free Baking Powder?

    No, you don't need to use baking powder.

    Is there a way to make these cookies without eggs?

    Yes, you can replace the eggs with 1 cup of applesauce.

    Can I Double This Recipe?

    Yes! Just make sure to use a large or medium bowl.

    Ingredients
      

    • 1 teaspoon baking soda
    • 1 teaspoon salt
    • 1 cup 2 sticks butter, softened
    • ¼ cup granulated sugar
    • ¼ cup packed brown sugar
    • 1 teaspoon vanilla extract
    • 2 eggs
    • ½ cup Funfetti sprinkles
    • 1 cup vanilla buttercream

    Instructions
     

    • Preheat oven to 375
    • Beat butter and add sugar and eggs using a paddle attachment.
    • Add in the dry ingredients
    • Stir in Funfetti
    • Scoop cookie down onto a parchment-lined baking sheet
    • Chill in the fridge for 10 min
    • Bake for 20 minutes
    • Once cookies are cooled, spread buttercream on the flat side of each cookie and put two cookies together to form a sandwich.
