- Baking Soda - this makes the cookies rise!
- Funfetti sprinkles - my favorite!
- Brown sugar - gives the cookies a nice, rich taste.
- Granulated sugar - crisps up the cookies a bit.

Gluten-Free Vanilla Cookie Sandwiches
Ingredients
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup 2 sticks butter, softened
- ¼ cup granulated sugar
- ¼ cup packed brown sugar
- 1 teaspoon vanilla extract
- 2 eggs
- ½ cup Funfetti sprinkles
- 1 cup vanilla buttercream
Instructions
- Preheat oven to 375
- Beat butter and add sugar and eggs using a paddle attachment.
- Add in the dry ingredients
- Stir in Funfetti
- Scoop cookie down onto a parchment-lined baking sheet
- Chill in the fridge for 10 min
- Bake for 20 minutes
- Once cookies are cooled, spread buttercream on the flat side of each cookie and put two cookies together to form a sandwich.
